Brownie de chocolate e abóbora / Pumpkin and chocolate brownie


Domingo é dia de estar na cozinha a preparar alguns almoços para a semana seguinte e às vezes também uns docinhos
Encontrei esta receita na net, é sem gluten, sem lacticínios, sem grãos e é paleo.
A receita já vem com as medidas traduzidas em gramas, mas eu decidi pesar as medidas para ver se batiam certo e surpresa surpresa, não batem certo, (mas pode ser o tipo de ingredientes que diferem de país para país). 
A mim, o resultado final parece-me mais um brownie, por isso baptizei o bolo (que no site até chamam de pão!)

I found this recipe on the net, it is gluten-free, dairy-free, grain free and paleo.
The recipe already comes with the measures translated in grams, but I decided to weigh the measures to see if they hit certain and surprise surprise, not interely correct (but may vary because of ingredients that differ from country to country).
To me, the end result looks more like a brownie, so I baptized the cake (which on the site they call bread!)

Eu vou colocar aqui as medidas medidas por mim, mas podem fazer conforme o que vem no site.
eu tenho aquelas colheres de medida americanas, que podem ser diferentes das nossas colheres de sopa normais por isso também coloco em gramas para ajudar quem não tem essas colheres.
a receita original tem nozes pecan como opção, eu não coloquei.

I have those american measuring spoons, which may be different from our normal tablespoons so I also put in grams to help anyone who does not have these kind of spoons.
The original recipe has pecan nuts as an option, I did not put it.

Ingredientes:
261gr de puré de abóbora / 1 cup of pumpkin puree
2 colheres de sopa (35gr) de leite de coco / 2 tablespoons  of coconut milk
3 colheres de sopa (44gr) de óleo de coco derretido / 3 tablespoons of melted coconut oil
118gr de mel ou xarope de ácer / 1/3 cup raw honey ou maple syrup
2 ovos à temperatura ambiente / 2 eggs room temperature
1 colher de chá (5gr) de extracto de baunilha / 1 teaspoon of vanilla extract
230 gr de farinha de amêndoa / 2 cups blanched almond flour
2 colheres de sopa (16gr) de farinha de linhaça dourada / 2 tablespoons flaxseed meal
30 gr de cacau em pó / 1/4 cup raw cacau powder
3 gr de canela moída / 1 1/2 teaspoon ground cinnamon
pitada de sal / 1/2 teaspoon salt * nota, eu só coloquei uma pitada, achei que era sal a mais e para o meu gosto ficou óptimo / *note, I just put a pinch, I thought it was too much salt and for my taste, the pinch of sal worked great)
5 gramas bicarbonato de sódio / 1 teaspoon baking soda
130 gr chocolate 70% cortado em pedaços / 2/3 cup 70% dark chocolate coarsely chopped


Preparação / Preparation:

Pré-aqueça o forno a 180º . Unte a forma com óleo de coco e forre com papel vegetal a minha forma é quadra com 20x20cm/Preheat oven to 350°F. Grease an 7x7inch pan with coconut oil and line it with parchment paper.

Numa tigela , misture os ingredientes húmidos com uma vara de arames, o puré de abóbora, o leite de coco, o óleo de coco, o mel, ovos e a baunilha. / Using a whisk, whisk together the wet ingredients in a large bowl: pumpkin puree, coconut milk, coconut oil, honey, eggs, and vanilla.

Noutra tigela, misture os ingredientes secos com uma colher, até que não tenha mais caroços: farinha de amêndoa, farinha de linhaça, o cacau em pó, a canela, bicarbonato de sódio e o sal. Em seguida, adicione as nozes (eu não usei as nozes na minha receita)./ In a separate bowl, mix the dry ingredients with a spatula until there are no more lumps: almond flour, flaxseed meal, cacao powder, cinnamon, baking soda, and salt. Then stir in the pecans.

Adicione os ingredientes secos aos ingredientes molhados até ficar homogéneo, mas não misture demais. A massa vai ficar grossa. Adicione o chocolate em pedaços à massa reservando alguns pedaços para decorar o topo. Coloque a massa na forma e coloque os pedaços de chocolate no topo. / Gently mix dry ingredients into wet to form a batter. Do not over mix. The batter will be thick. Fold the chopped chocolate into the batter reserving a few chunks to decorate the top of the bread. Pour the batter in the pan, and sprinkle chocolate chunks on top.






Deixe cozer durante 30 minutos descoberto, depois cubra com papel alumínio para evitar que o topo queime e deixe cozer mais 20 minutos. O tempo de cozedura pode variar de acordo com o vosso forno e a forma que vocês usem, ou então podem espetar um palito e se ele sair limpo, aproximadamente 50 minutos no total podem tirar do forno. Eu deixei mais 10 minutos e mesmo assim ficou húmido no meio / Bake for 30 minutes uncovered, then cover with aluminum foil to prevent the top from burning and bake for an additional 20 minutes. Baking time may vary depending on your oven and the pan you use, so bake until nserted a toothpickinto the center and comes out clean, approximately 50 minutes total. I left another 10 minutes and it was still wet in the middle.




Deixe arrefecer totalmente, guarde num recipiente hermético no frigorífico para preservar a frescura/ Leave to cool completely, store in an airtight container in the fridge to preserve freshness.

Granola II

Mais uma granola para adicionar a iogurtes, leite, ou simplesmente comer à mão... é deliciosa.
Feita com frutas desidratadas para um toque de doçura.
E experimentei pela primeira vez a noz pecan, muito usada nos EUA, mas ainda bastante cara aqui em Portugal

No final, ficam com cerca de 450gr de granola

1 cup de Aveia
1 1/2 cup arroz puff
1/4 cup noz pecan
1/3 cup semente de girassol
1/3 cup semente de abóbora
1/3 cup coco laminado
1/3 cup Arando vermelho (Cranberry)
6 alperces desidratados
2 ou 3 colheres de sopa de mel
2 colheres sopa de óleo de coco (desodorizado)
Papel vegetal
Frascos

Colocar as sementes de chia, o coco em lascas, os arandos e os alperces em pedaços numa taça à parte e reserve.

Colocar o arroz puff, aveia, as sementes de abóbora, as sementes de girassol e as nozes pecan cortadas em pedaços numa tigela e misturar.

Noutra taça, derreter o mel e óleo de coco. Deitar sobre a mistura da tigela e misturar bem até todos os ingredientes estarem cobertos.

Colocar uma folha de papel vegetal num tabuleiro e deitar a mistura em cima, levar ao forno 20 a 25 min a 160º, ir vigiando, pois queima com facilidade e mexer constantemente.
Quando estiver dourado, remover do forno e deixar arrefecer completamente.

Após arrefecer, adicionar a chia, o coco, os arandos e os alperces e misturar tudo.












Colocar em Frascos de Vidro e consumir dentro de 2 a 3 semanas.

Another granola to add to yogurts, milk, or simply eat by hand ... it's delicious.

Made with dehydrated fruits for a touch of sweetness.
And I tried for the first time the pecan nut, widely used in the USA, but still quite expensive here in Portugal.


Ingredients:

1 1/2 cup puff rice

1/3 cup pumpkin seeds
1/3 cup of sunflower seeds
1/4 cup chopped pecan nuts
1/3 cup of coconut shavings roasted  (if not roasted, add with the remaining ingredients that go to the oven)
1/3 cup of cranberrys
6 apricots
2 tablespoons chia seeds
2 tablespoons coconut oil
2 or 3 tablespoons of honey
Parchment paper
1 jar

Place the chocolate, chia seeds, coconut shavings, cranberrys, and apricots chopped in a separate bowl and reserve.

Put the rice puff, the oats, the pumpkin seeds, the sunflower seeds and pecan nuts cut into pieces in a bowl and mix.

In another bowl, melt the honey and coconut oil. Pour over the mixture above and mix well until all the ingredients are covered.

Place a sheet of parchment paper in a tray and pour the mixture on top, take the oven 20 to 25 min at 160º, watch it, then burn easily and stir constantly.

When golden, remove from oven and allow to cool completely.

After cooling, add the chia seeds, coconut shavings, the cranberrys and apricots and mix everything.

Put in Glass Bottles and consume within 2 to 3 weeks

Granola

Faço esta granola várias vezes por ano, é deliciosa e acompanha os meus pequenos almoços no inverno e também no verão, normalmente com iogurte grego.
Leva vários ingredientes que vou alternado conforme o que tenho na dispensa.


Ingredientes:

1 cup arroz puff
1 cup de aveia
1/3 cup de sementes de abóbora
1/3 cup de sementes de girassol
1/3 cup de amêndoas
1/3 cup de coco em lascas torrado (se usar não torrado, junte com os restantes ingredientes que vão ao forno)
1/3 cup de pepitas de chocolate
2 colheres de sopa de sementes de chia
1 colher de sopa de sementes de linhaça
2 colheres de sopa de óleo de coco
2 ou 3 colheres de sopa de mel
Papel vegetal
1 frasco

Colocar o chocolate, as sementes de chia, as sementes de linhaça e o coco em lascas numa taça à parte e reserve.





Colocar o arroz puff, aveia, as sementes de abóbora, as sementes de girassol e as amêndoas cortadas em pedaços numa tigela e misturar.







Noutra taça, derreter o mel e óleo de coco. Deitar sobre a mistura da tigela e misturar bem até todos os ingredientes estarem cobertos.




Colocar uma folha de papel vegetal num tabuleiro e deitar a mistura em cima, levar ao forno 20 a 25 min a 160º, ir vigiando, pois queima com facilidade e mexer constantemente.
Quando estiver dourado, remover do forno e deixar arrefecer completamente.



Após arrefecer, adicionar as pepitas de chocolate, as sementes de chia e as de linhaça e misturar tudo.


Colocar em Frascos de Vidro e consumir dentro de 2 a 3 semanas (aqui em casa não dura tanto!) como cá em casa recicla-se muitos frascos, tenho uns de cada nação, o grande é para guardar na dispensa e o pequeno é para transportar para o trabalho.



Adicionar a uma taça de iogurte grego com ou sem fruta e voilá!
