Bolo de Chocolate Martha Stewart / Chocolate Cake Martha Stewart


Setembro é mês de festa cá em casa, o meu marido faz anos e eu também, o bolo escolhido foi de chocolate com recheio e cobertura de chocolate (sim, muito chocolate!!). A receita é da Martha Stewart Kids - Chocolate Cake - Spring 2005

Esta receita dá um bolo grande, o que vêm na foto é só metade do bolo.

Ingredientes:
175 gramas de cacau em Pó, mais para polvilhar a forma
750 gramas de açúcar (só usei 500 gr, pois is rechear e cobrir o bolo)
480 gramas de farinha
12 gramas fermento
20 gramas de bicarbonato de sódio
10 gramas de sal fino
375 ml de água quente
90 gramas de óleo
375 gramas de leitelho
7,5 ml de baunilha
3 ovos grandes


Preparação:
Peneirar o cacau, o açúcar, a farinha, o fermento, o bicarbonato  de sódio e o sal para uma taça grande.
Nessa mesma taça, colocar a água quente, o óleo, o leitelho, a baunilha e bater com a batedeira até ficar incorporado, adicionar os ovos um a uma batendo com a batedeira entre cada adição de ovo.
Dividir a massa por duas formas de 20 cm que foram barradas com manteiga, com o fundo coberto de papel vegetal e passadas por cacau em pó.
Levar ao forno a 190ºC durante 45 a 55 min se espetar um palito no centro o mesmo deverá vir seco.
Deixar arrefecer o bolo na forma durante 20 min antes de retirar e deixar o bolo arrefecer naturalmente.

O recheio e cobertura do bolo, foi um cruzamento entre receita da Martha Stewart e uma invenção minha, ficou tipo mousse de chocolate e ficou bem bom, mostro nos próximos posts.

September is a month of celebration here at home, it´s my husband birthday, and mine too, the cake i made this years is chocolate cake filled and covered with chocolate (yes, a lot of chocolate !!). The recipe is from Martha Stewart Kids - Chocolate Cake - Spring 2005 issue

This recipe gives a big cake, what comes in the picture is only half of the cake.

Ingredients:
1 1/2 cups unsweetened cocoa powder, plus more for dusting
3 cups sugar
3 cups all purpose flour
1 1/2 teaspoons baking powder
1 tablespoon of baking soda
1/2 teaspoons of salt
3/4 cups vegetable oil
1 1/2 cups buttermilk
1 1/2 teaspoons vanilla extract
3 large eggs
1 1/2 cups hot water

Preparation:

Sift cocoa, sugar, flour, baking powder, baking soda and salt into a large bowl.
In that same bowl, put the hot water, the oil, the buttermilk, vanilla and beat with the mixer until it is incorporated, adding the eggs one by one by beating with the mixer between each egg addition.
Divide the dough into two 20 cm (8 in.) baking pans that have been buttered, covered in parchment paper, and passed through cocoa powder.
Bake at 190ºC for 45 to 55 min if a stick sticks in the center it should come dry.
Allow cake to cool in pan for 20 min before removing and allow cake to cool naturally.

The filling and topping of the cake was a cross between Martha Stewart's recipe and an invention of mine, it was like chocolate mousse and it was very good, I show in the next posts.

Cookies 8 minutos / 8 minutes cookies - Paleo Friendly



Estando eu cada vez mais interessada em comer melhor e numa vida mais saudável, estou constantemente à procura de receitas com novos sabores e ingredientes.
Encontrei estas bolachas no site Jo Cooking e decidi experimentar, os ingredientes são fáceis de encontrar em qualquer super/hipermercado.

I found these cookies on Jo Cooking website and decided to try them, the ingredients are easy to find in any super / hypermarket.


Receita para 9 bolachas (a mim rendeu-me 12 bolachas)
Recipe for 9 cookies ( served 12 cookies)

6 colheres de sopa de manteiga amolecida sem sal / 6 tablespoons soft unsalted butter
6 colheres de sopa de açúcar de coco / 6 tablespoons coconut sugar
1 colher de sopa de extracto de baunilha / 1 tablespoons vanilla extract 
1 ovo / 1 egg
12 colheres de sopa de farinha de fubá de mandioca (polvilho doce) / 12 tablespoons cassava flour finely ground(also known as manioc/yuca ) 
1 colher de sopa de linhaça triturada em pó / 1 tablespoon golden flaxseed grounded
1/2 colher chá flor de sal / 1/2 teaspoon fleur de sel
1 colher de chá de bicarbonato de sódio / 1 teaspoon bicarbonate of soda
pepitas de chocolate (80% cacau) / Chocolate chips (80% cocoa)

Preparação / Preparation:
Pré aquecer o forno a 180ºc / Preheat the oven to 180ºC/356ºF
Juntar a manteiga amolecida com o açúcar bater até ficar homogéneo /Add the softened butter with the sugar beat until homogeneous.
Juntar o ovo e a baunilha e misturar bem /Add the egg and the vanilla and mix well
Juntar o polvilho, a linhaça, o sal e o bicarbonato / Add the cassava flour, flaxseed flour, salt and baking soda.
Juntar as pepitas de chocolate e misturar bem /Add the chocolate chips and mix well.

Colocar colheradas num tapete de silicone (fiz o meu 1º batch no tapete de silicone, mas depois mudei para papel vegetal pois estavam meio cruas no centro)
Put spoonsfulls on a silicone carpet (I made my 1st batch on the silicone carpet, but then I changed to parchment paper because they were a little raw in the center)

Levar 8 min no forno (no meu demorou 10 min - cada forno é um forno)
Take 8 min in the oven (in my oven took 10 min - every oven is different)

Retirar do forno e deixar arrefecer numa grelha.
Remove from the oven and let it cool on a cooling rack.

Bolachas com pepitas de chocolate / Chocolate chip cookies



Fiz estas cookies no fim de semana, queria um docinho, mas não sabia bem o quê lembrei-me desta receita que a Constança Cabral partilhou há uns anos (2013...estou mesmo a ficar velha... aqui e nunca mais me esqueci delas) finalmente experimentei, gostei delas, apenas achei que são um pouco doces de mais. Pensava que era paranóia minha porque tenho reduzido bastante nos açúcares e podia estar a sentir mais o doce, mas como não fui a única a achar, fiquei mais descansada.

Aviso já, as bolachas ficam gigantes! usei uma colher de gelado daquelas com 5 cm de diâmetro e as bolachas ficaram com 10 cm no final!! mostro uma foto com a minha mão para verem como são grandes.

Fiz outras um pouco mais pequenas e renderam bastantes bolachas, mais que as 18 indicadas.

Podem embrulhar e oferecer a quem mais gostam!


Manter num frasco fechado hermeticamente para manterem a suavidade, se ficarem num frasco sem ser hermético, vão ficar crocantes.

I made these cookies over the weekend, I wanted a sweetie, but I was not sure what.
 I remembered this recipe that Constança Cabral shared a few years ago (2013 ... I'm really getting old ... here and I never forgot of them) I finally tried them, I liked them, I just thought they were a little too sweet.
I thought it was paranoia of mine because I have reduced sugar quite a bit and I may have been feeling more sweet os things, but since I was not the only one to find it, I was more rested.

Warning, the cookies are gigantic! I used a ice cream scopp spoon with 1.96inch in diameter and the biscuits were 3.93inch in the end !! I show a photo with my hand to see how big they are.

You can wrap and offer to those you like!

Keep in a sealed Jar to maintain the softness, if kept in a jar without being hermetic, the cookies will become crunchy.
