Brownie de chocolate e beterraba /Chocolate and beet brownie



Andava com vontade de comer qualquer coisa doce a acompanhar o café, com este tempo esquisito que tem estado esta semana em pleno Agosto (parece que vai chover e está frio de manhã e à noite) é o que apetece, fui a um dos meus blogues de referência ver receitas e não vim desapontada. 

Escolhi um brownie de beterraba que é bastante fácil de fazer e tinha os ingredientes todos em casa o que facilitou imenso.

Apenas alterei a vaqueiro líquida por manteiga normal.

Ingredientes:

150 gr manteiga à temperatura ambiente

200 gr açucar

75 gr chocolate em pó

120 gr beterraba cozida ou assada em puré 

3 ovos

75 gr de farinha de trigo

na cobertura optei por açúcar em pó


Numa taça misture a manteiga, o açúcar, o puré de beterrabas e o chocolate. Misture depois os ovos até estarem bem incorporados e finalmente a farinha.

Unte e forre uma forma retangular com papel vegetal também untado com manteiga e polvilhado com cacau e verta a mistura dos brownies.

Leve a assar em forno previamente aquecido a 180ººC durante cerca de 30 minutos ou até o bolo estar cozinhado. Retire do forno e deixe arrefecer completamente antes de desenformar.

Corte o brownie  em quadrados e polvilhe com o açúcar em pó. Sirva.

Biscoitos de milho e limão/ Lemon and corn biscuits




Já não fazia biscoitos há algum tempo, vi esta receita na net e decidi experimentar, mas infelizmente imprimi a receita e não guardei o site de onde tirei.
É feita com farinha de milho, uma farinha pouco usada cá em casa, mas que tenciono usar com mais frequência.
Eram para ser uma espécie de lagartos, mas ao tirar a massa do saco estava a custar tanto que tirei o bico e empurrei a massa pelo saco e ficaram uns canudos. (alterei as quantidades de açúcar na receita original eram 100gr e não usei o açúcar em pó)
I had not made cookies for some time, I saw this recipe on the net and I decided to try it, but unfortunately I printed the recipe and I did not save the site from where I took it.
It is made with corn flour, a flour not used much here at home, but I intend to use it more often.
They were a kind of lagartos (portuguese tradicional biscuit), but when I pulled the dough out of the bag, it was so hard that I took out the nozzle and pushed the dough through the bag and there were some straws. (I changed the amounts of sugar in the original recipe were 100gr and I did not use the powdered sugar)


Ingredientes /Ingredients:

250 gr farinha de milho /250 gr cornflour
75 gr de manteiga fria em pedaços /75 g of cold butter cut into pieces
80gr açúcar /80 gr sugar
1 ovo / 1 egg
50 ml de água fria /50 ml of cold water
Raspa de 1 limão / 1 lemon zest
Açúcar em pó para polvilhar (não coloquei)/Powdered sugar to sprinkle (didn't use it)

Colocar a farinha na taça, adicionar o açúcar, a raspa do limão, a manteiga e amassar até obter uma mistura parecida com areia/Put the flour in the bowl, add the sugar, lemon zest, butter and knead until you get a sand-like mixture.



Adicionar o ovo e misturar /Add the egg and mix.
Acrescentar a água e amassar bem /Add water and knead well.


Colocar num saco de pasteleiro (o meu saco é reutilizável) e colocar os biscoitos num tabuleiro forrado com papel vegetal /Place in  piping bag (my bag is reusable) and put the cookies in a tray lined with parchment paper.


Pré-aquecer o forno nos 180c colocar o tabuleiro durante 25 min (na receita original eram só 15 min, mas no meu forno ainda estavam crús aos 15 min e ficaram mais tempo / Preheat the oven to 180 ° C/350F  and place the pan for 25 min (in the original recipe it was only 15 min, but in my oven it was still raw at 15 min and stayed longer.

Bolo de Iogurte e cupcakes / Yogurt cake and cupcakes




Hoje foi dia de fazer bolinho, chove lá fora e apetece qualquer coisa doce com um café ou chá, este um bolo tradicional em portugal, e super fácil de fazer e leva ingredientes que normalmente temos em casa.
Today was a cake day, it rains outside and i fancy something sweet with a coffee or tea, this a traditional cake in portugal, and super easy to make and takes ingredients that anyone usually have at home.

Ingredientes:
Raspa de 1 limão (parte amarela) / zest of 1 lemon (yellow part only)
5 ovos grandes (5 big eggs)
1 iogurte natural (125gr) usei grego (125gr natural yogurt (i used greek yogurt)
110 gr óleo vegetal /110 grs of vegetable oil
250gr de açúcar /250gr sugar
150 gr de farinha/150 gr wheat flour
1 colher de sopa de fermento /1 tablespoon of bakig powder


Pré-aqueça o forno a 180º
Colocar numa taça a raspa de limão, o açúcar, os ovos o oleo e o iogurte, bata até ficar uniforme.
adicione a farinha e o fermento e bata até incorporar a não se ver mais a farinha.
unte uma forma com manteiga e farinha e deite a massa, leve ao forno cerca de 40 min.
quando espetar um palito e sair seco retire do forno e deixe arrefecer 10 min, vire a forma para um prato e voilá.

Preheat the oven to 180º/350ºC
Put lemon zest, sugar, eggs, oil and yogurt in a bowl, beat until smooth.
Add the flour and the yeast and beat until incorporated and ou d'ont see the flour anymore.
Spread a cake tin with butter and flour and pour the dough.
Put in the oven about 40 min.
When you stick a toothpick and come out dry, remove from the oven and let cool 10 min, turn the form onto a plate and voilá!

Versão Cupacakes / Cupcake version

Faça a receita em cima e em vez de colocar numa forma, coloque em formas de papel.
coloque no forno durante 25 min ou até espetar um palito e sair limpo.
se tiver em casa lemon curd, coloque uma colher de café em cada cupcake.
Make the recipe above and instead of putting it into a big cake tin, put it in paper tins.
Place in the oven for 25 min or until you stick a toothpick and come out clean.
If you have lemon curd at home, put a 2 teaspoons os lemon curd in each cupcake.

Caracóis de Laranja e Chocolate / Orange and chocolate curls

Este fim de semana resolvi usar uns dos muitos cubos de fermento de padeiro fresco que tenho no frigorífico e que tenho que usar o mais breve possível.
Esta receita é da revista da bimby de Setembro de 2011 e ficou deliciosa para o lanche que fiz a acompanhar um capucchino, só achei que após arrefecer a massa não fica tão fofinha.




Ingredientes para a massa:
70gr de leite
50gr de açúcar
1/2 colher de chá de sal fino
60gr de manteiga
20g de fermento de padeiro fresco
420gr de farinha de trigo tipo 65 (se utilizar farinha tipo 55 acrescente mais 30gr =450gr)
2 ovos inteiros

Para o recheio:
Casca de 1/2 laranja, só parte laranja
70gr de açúcar
100gr de chocolate para culinária em pedaços
50gr de manteiga derretida
2 gemas de ovo batidas para pincelar
açúcar em pó para polvilhar

Ferramentas:
Bimby
rolo da massa
papel vegetal

Preparação da massa:
Coloque no copo o leite, o açúcar, o sal, a manteiga e o fermento. programe1.30min/37ºc/vel 2
Adicione 200gr de farinha e os ovos e envolva 5seg/vel 6
Adicione a farinha restante e amasse 2min/ vel espiga
Retire para um tabuleiro polvilhado com farinha e deixe levedar em local morno durante 40 min.



Preparação do recheio:
Coloque no copo a casca da laranja e o açúcar e pulverize 15seg/ vel 9, adicione o chocolate e dê uns golpes de turbo. Reserve.

Após a massa estar levedada, Pré-aqueça o forno a 180ºc

Numa superfície polvilhada com farinha, estenda a massa com um rolo formando um rectângulo, pincele a massa com a manteiga derretida e distribua o reparado de chocolate e laranja.





Enrole a massa de forma a ficar com um canudo recheado e corte essa massa em fatias de 2 cm de largura 



Coloque em cima de um tabuleiro forrado com papel vegetal e pincele com as gemas de ovo leve ao forno a 180ºc.
Quando retirar do forno deixar arrefecer um pouco e polvilhar com açúcar em pó.

Eng: This weekend I decided to use one of the many cubes of fresh baker's yeast I have in the fridge and I have to use it as soon as possible because I bought more than i need at Christmas time.

This recipe is from the bimby/thermomix magazine of September 2011 and was delicious in the snack I made to accompany a capucchino. I just found that after the dough cooling looses it's fluffyness.

Ingredients for the dough:
70gr of milk
50g of sugar
1/2 teaspoon of fine salt
60gr of butter
20g fresh baker's yeast
420gr of wheat flour type 65 (if you use flour type 55 add plus 30gr = 450gr)
2 whole eggs

For the filling:
Peel of 1/2 orange, orange part only
70gr of sugar
100gr of chocolate in pieces
50 gr of melted butter
2 beaten egg yolks for brushing
Powdered sugar for sprinkling

Tools:
Bimby/thermomix
Rolling pin
Parchment paper

Preparation of the dough:
Put the milk, sugar, salt, butter and yeast in the thermomix cup. programe 1.30min / 37ºc / vel 2
Add 200gr of flour and eggs and mix 5seg / vel 6
Add the remaining flour and knead 2min / Wheat button

Remove to a tray dusted with flour and let proof in warm place for 40 min.

Preparation of the filling:


Put the orange peel and sugar in the thermomix cup and pulverize 15seg / vel 9, add the chocolate and give a turbo blows. Reserve.

On a surface dusted with flour, spread the dough with a roll forming a rectangle, brush the dough with the melted butter and distribute the chocolate and orange mix..

Roll the dough so that it fills with a stuffed straw and cut the dough into slices 2 cm wide

Place on a tray lined with parchment paper and brush with the egg yolks bake at 180ºc.


when removing from the oven let cool slightly and sprinkle with powdered sugar.

Bolo Red Velvet / Red Velvet cake

Já é a terceira vez que faço este bolo, fica fofo e bem vermelho.

A receita é americana (claro) e por isso faço com as medidas de "cups" porque mesmo que digam que 1 cup equivale a 250ml a realidade, é que o açúcar, a farinha, o óleo etc, não têm o mesmo peso e por isso têm equivalências diferentes em gramas, e além disso, dava uma trabalheira converter aquilo tudo, um dia nas compras encontrei daquelas medidas cups em plástico no Continente marca Kasa imagem em baixo, mas em cor azul, queria em inox por ser mais higiénico, mas não encontrei.
Para as medidas de colher, uso um medidor de colheres em inox, comprei cá, mas aqui em Portugal foi muito difícil de encontram um conjunto que eu gostasse e tivesse um aspecto robusto e não fosse um escândalo de preço, mas comprei no C.C. Alegro numa loja de bolos.




Agora vamos ao bolinho...


2 1/2 cups farinha sem fermento
1 1/2 cups açucar
1 teaspoon bicarbonato de sódio
1 teaspoon sal fino
1 teaspoon cacau em pó
1 1/2 cups óleo
1 cup buttermilk, temperatura ambiente
2 lovos grandes, temperatura ambiente
2 tablespoons corante vermelho 28 gr em gel  (só usei metade 14 gr) 
1 teaspoon vinagre (usei de maçã)
1 teaspoon extrato de baunilha (caseiro)

Direções:
Pré-aquecer o forno a 180ºc.
Peneirar para uma tigela os ingredientes secos: farinha, o açúcar, o cacau, o sal e o bicarbonato.
Ingredientes húmidos: juntar o buttermilk e o óleo. Juntar os ovos um a um e adicionar o corante, o vinagre e o extracto de baunilha
Juntar os ingredientes secos aos húmidos batendo sempre com a batedeira até ficar uma massa homogénea.
Colocar papel vegetal e manteiga numa forma circular (a minha tem 32 cm) em baixo e nos lados (podem colocar em duas formas se quiserem um bolo mais pequeno, mas mais alto)
Colocar no forno por 40- 45 minutos (varia de forno para forno) e verifico com um palito ou esparguete se não vier massa agarrada é porque está bom, e deixo arrefecer na forma.
Podem usar cobertura de queijo creme, coloco a receita coloco em breve :)

This is the third time I make this cake, it looks fluffy and very red.

The recipe is American and so I do with the cup measures because even if they say that 1 cup equals 250ml the reality, is that sugar, flour, oil etc, do not have the same weight and this has different equivalences in grams, and besides, it is a hassle to convert it all, one day I found one of those measures plastic cups in the Continent brand Kasa image below, but in blue color, wanted in stainless becaouse is more hygienic, but I did not find it.

Ingredients:

2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon fine salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, at room temperature
2 large eggs, at room temperature
2 tablespoons red food coloring (1 ounce)
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

Directions:
Preheat oven to 350ºF.
Sift together the flour, sugar, cocoa powder, salt, and baking soda.
Using an electric mixer, whisk together the buttermilk and oil. Mix in the eggs one at a time, and then mix in the food coloring, vinegar, and vanilla extract.
Mix the dry ingredients into the wet just until a batter forms.
Lightly grease the round baking tin (mine has 12.5inch) or you can divide the batter evenly bettween the two if you want a smaller but talle cake. Lay a strip of parchment paper down to help remove the baked cakes more easily.
Bake for 40-45 minutes until toothpick inserted comes out clean, remove from the oven and let cool in the tin.
Or they can make Cupcakes!

Can use cream cheese topping, I place the recipe next week :)

Swiss buttercream

Está é a receita de buttercream que costumo usar para os meus bolos, não é minha, é da Cupcake Gemma e gostei do sabor que coloquei um pouco mais de baunilha que o indicado.

Deu para barrar um bolo grande 32cm x 7cm e ainda sobrou !

4 claras
300g açúcar granulado 400g manteiga sem sal à temperatura ambiente
1 colher de chá de extracto de baunilha


Banho maria: coloquei um tacho com cerca de 3 cm de água e coloquei uma taça de porcelana de forma a que não toque na água.
nessa taça, colocar as clara e o açúcar e mexer com uma vara de arames até o açúcar se dissolver.



Retirar do banho maria e bater com a batedeira durante 10/15 min até arrefecer.



Adicionar a manteiga aos poucos continuando sempre a bater no final, adicionar a baunilha e já está.

Hello, Buttercream recipe I usually use for my cakes, it's not mine, it's from Cupcake Gemma, i doubled the vanilla.
He gave me cover a big cake 4 egg whites 300g granulated sugar 400g unsalted butter at room temperature 1 teaspoon vanilla extract Water bath: Put a pan with about 3 cm of water and put a porcelain bowl so that it doesn't touch the water. In this bowl, put the egg whites and sugar stir with a wire rod until the sugar dissolves. Remove from the water bath and beat with the mixer for 10/15 min until cool.

Add butter gradually continuing to beat at the end, add the vanilla and that's it !!

Curd de Limão / Lemon Curd


Este Lemon Curd é uma delicia, faço de vez em quando para rechear um bolo, ou simplesmente para comer com iogurte grego e fruta.

Receita é do livro The Great British Bake Off  - How to Bake e é bastante simples

Ingredientes:

125 gr de manteiga (temperatura ambiente)
225 gr açúcar granulado
3 gemas de ovo (temp. ambiente)
Raspa e sumo de 3 limões

Banho Maria: Colocar um tacho com água no fundo (2 a 3 cm) colocar uma taça por cima sem que essa taça toque na água.

Colocar a manteiga, o açúcar a raspa e o sumo dos limões e mexer até dissolver o açúcar.

Retirar o lume e adicionar as gemas mexendo sempre, voltar a colocar a taça em cima do tacho e mexer com uma vara de arames até a mistura engrossar (+- 20 min).

Colocar num frasco, deixar arrefecer por completo e colocar a tampa. 
Guardar no frigorífico máximo 2 semanas.

This Lemon Curd is a delight, I do it from time to time to fill a cake, or simply to eat with Greek yogurt and fruit.

Recipe is from The Great British Bake Off Book - How to Bake and is quite simple

Ingredients:

125 gr butter (room temperature)
225 gr granulated sugar
3 egg yolks (room temperature)
Zest and juice of 3 lemons

"Mary´s Bath": Place a pan with water in the bottom (2 to 3 cm) place a bowl over the top without the bowl touch the water.

Put the butter, the sugar in the zest and the juice of the lemons and stir until the sugar dissolves.

Remove the bowl from the heat and add the egg yolks stirring constantly, put the bowl on top of the pan again and stir with a wisk until the mixture thickens (+ - 20 min).

Place in a vial, leave to cool completely and place the lid.
Store in refrigerator for up to 2 weeks.
