Brownie de chocolate e beterraba /Chocolate and beet brownie



Andava com vontade de comer qualquer coisa doce a acompanhar o café, com este tempo esquisito que tem estado esta semana em pleno Agosto (parece que vai chover e está frio de manhã e à noite) é o que apetece, fui a um dos meus blogues de referência ver receitas e não vim desapontada. 

Escolhi um brownie de beterraba que é bastante fácil de fazer e tinha os ingredientes todos em casa o que facilitou imenso.

Apenas alterei a vaqueiro líquida por manteiga normal.

Ingredientes:

150 gr manteiga à temperatura ambiente

200 gr açucar

75 gr chocolate em pó

120 gr beterraba cozida ou assada em puré 

3 ovos

75 gr de farinha de trigo

na cobertura optei por açúcar em pó


Numa taça misture a manteiga, o açúcar, o puré de beterrabas e o chocolate. Misture depois os ovos até estarem bem incorporados e finalmente a farinha.

Unte e forre uma forma retangular com papel vegetal também untado com manteiga e polvilhado com cacau e verta a mistura dos brownies.

Leve a assar em forno previamente aquecido a 180ººC durante cerca de 30 minutos ou até o bolo estar cozinhado. Retire do forno e deixe arrefecer completamente antes de desenformar.

Corte o brownie  em quadrados e polvilhe com o açúcar em pó. Sirva.

Recheio de Chocolate / Ultimate Chocolate Frosting-Martha Stewart



Este foi o recheio que coloquei neste bolo, mas após colocar no centro do bolo achei demasiado espesso e a metade da receita adicionei um pacote de natas*.

Ingredientes:
420 gramas de açúcar em pó
170 gramas de manteiga
120 gramas cacau em pó
125 ml leite temperatura ambiente
5ml extracto baunilha

*200 ml natas

Preparação:
Em uma tigela pequena, peneire o açúcar em pó e o cacau em pó.
Adicione manteiga, leite e baunilha, mexa até ficar homogéneo e sem grumos.

This was the filling I put in this cake, but after placing in the center of the cake I found it too thick and half of the recipe I added a packet of cream*.

Ingredients:
3 1/2 cups confectioner's sugar
12 tablespoons (1 1/2 sticks of butter), room temperature
1 cup cocoa powder
1/2 milk, room temperature
2 teaspoons pure vanilla extract

* 200 ml cream

Preparation:
In a small bowl, sift together the confectioners' sugar and cocoa powder.
Add butter, milk, and vanilla; stir until smooth and free of lumps.

Meu bolo de aniversário 2018 /My birthday cake 2018



Quando alguém faz anos cá em casa, normalmente o bolo é caseiro, e este ano não foi excepção o bolo escolhido foi pão de ló receita (aqui) e o recheio foi de corneto de Morango (aqui), as receitas de pão de ló e do recheio são do grupo de facebook de "cake design - ideias e receitas" e chama-se "pão de ló da D. Fernanda" em honra da pessoa que o criou (Fernanda Rego), é um bolo fofo em que pode-se colocar algum tipo de líquido (xarope simples por exemplo) se for necessário (eu não coloquei), é ideal para fazer bolos em camadas (o favorito cá em casa) pois corta bem (fatias bem definidas) e aguenta bem com recheios.
Além do recheio também coloquei morangos frescos entre as camadas do bolo.
In our home, when is someone birthday usually the cake is homemade, and this year was no exception, the chosen cake was pão de ló recipe (here) and the filling was of Strawberry icecream flavor (here), the pão de ló recipes and of the filling are from the facebook group of "cake design - ideas and recipes" and it is called " Pão de ló da D. Fernanda " in honor of the person who created it (Fernanda Rego), it is a fluffy cake  it is ideal to make layered cakes (the favorite here at home) because it cuts well (well defined slices) and handle well with fillings and simple syrup.
In addition to the filling I also put fresh strawberries between the layers of the cake.


Comecei por cortar o bolo em 3 e em cada camada de bolo, adicionei recheio e morangos.

Quando cheguei à última camada, cobri o bolo com buttercream receita aqui, primeiro fiz um "crumcoat" e esteve no frigorífico e depois coloquei uma segunda camada de buttercream e alisei com uma espátula.

Fiz também uma ganache de chocolate que se revelou líquida de mais para o efeito que eu queria (queria fazer um drip mais consistente), no início estava bonita, mas depois acabou por ir toda para o prato, mas de sabor estava excelente!
Also made a chocolate ganache that turned out to be too liquid for the purpose (I wanted to make a more consistent drip), at first it was pretty, but then it ended up going all the way to the plate, but it tasted great!

Bolo de chocolate e curgete / Chocolate Zucchini Cake



Adoro bolos que levem vegetais, já fiz com abóbora (aqui), já fiz com cenoura (aqui) e também costumo fazer um que leva beterraba (ainda não coloquei aqui a receita), os bolos ficam húmidos e combinam maravilhosamente com chocolate. Nota-se muito que gostamos de chocolate cá em casa?
Esta receita é da Dani Spies do site Clean and Delicious .
I love cakes with vegetables, I've done cakes with pumpkin (here), with carrots (here) and also usually make with beetroot (I have not yet put the recipe here), the cakes are moist and combine beautifully with chocolate. Have you notice that we like chocolate here at home?

Ingredientes:
Óleo de coco para untar a forma 20x20 cm/ coconut oil to coat the baking dish 7x7 inch
2 ovos / 2 eggs
1 colher de sopa de extracto de baunilha / 1 tbsp vanilla extract (usei pasta de baunilha e reduzi a quantidade/ i use vanilla paste and reduced the quantity)
78 gr de açúcar de coco / 1/2 cup coconut sugar 
73 gr de compota de maçã / 1/4 cup unsweetened apple sauce
136 gr de farinha de trigo/ 1 cup white whole wheat flour
60 gr de cacau / 1/2 cup unsweetened cocoa powder
8 gr de bicarbonato de sódio / 1.5 tsp baking soda
2 gr de sal / 1/2 tsp. salt (coloquei menos sal que a receita em inglês pedia)
388 gr de curgete ralada escorrida / 2 cups shredded zucchini 
92r de pepitas de chocolate/ 1/2 cup mini chocolate chips  (não tinha mini, coloquei pepitas do tamanho normal)

60 gr de pepitas para polvilhar por cima /1/4 cup chocolate chips to sprinkle on top


Preparação / Preparation:

Ralar a curgete, colocar a curgete num pano lavado e espremer até sair toda a água / Grate the curgete, place the curgete in a washed cloth and squeeze until leaving all the water.



Numa taça grande, colocar os ovos, a baunilha, o açúcar de coco e a compota de maçã, misturar tudo e deixar repousar enquanto prepara os restantes ingredientes/ In a large bowl, mix together the eggs, vanilla, coconut sugar, and apple sauce.  Set aside
Noutra taça,colocar a farinha, o cacau, o bicarbonato e o sal. juntar os ingredientes secos aos ingredientes húmidos e misturar levemente / In a medium bowl, mix together flour, cocoa powder, baking soda, and salt.  Add the dry  ingredients into the wet ingredients and stir until everything is just combined.
Envolva a curgete e as pepitas na massa /Gently fold the zucchini and 1/2 cup of the chocolate chips into the batter.  








Coloque a massa na forma previamente untada com o óleo de coco e adidione as restantes pepitas em cima da massa / Pour the batter into the baking pan already coated with coconut oil and sprinkle the remaining chips over the top.

Cozer no forno a 180ºc durante 30 a 35 min / bake in the oven for about 30 to 35 min in a 350F.

Nota: para conseguir 388gr de curgete ralada, precisei de 868 gr de curgete crua)

Caracóis de Laranja e Chocolate / Orange and chocolate curls

Este fim de semana resolvi usar uns dos muitos cubos de fermento de padeiro fresco que tenho no frigorífico e que tenho que usar o mais breve possível.
Esta receita é da revista da bimby de Setembro de 2011 e ficou deliciosa para o lanche que fiz a acompanhar um capucchino, só achei que após arrefecer a massa não fica tão fofinha.




Ingredientes para a massa:
70gr de leite
50gr de açúcar
1/2 colher de chá de sal fino
60gr de manteiga
20g de fermento de padeiro fresco
420gr de farinha de trigo tipo 65 (se utilizar farinha tipo 55 acrescente mais 30gr =450gr)
2 ovos inteiros

Para o recheio:
Casca de 1/2 laranja, só parte laranja
70gr de açúcar
100gr de chocolate para culinária em pedaços
50gr de manteiga derretida
2 gemas de ovo batidas para pincelar
açúcar em pó para polvilhar

Ferramentas:
Bimby
rolo da massa
papel vegetal

Preparação da massa:
Coloque no copo o leite, o açúcar, o sal, a manteiga e o fermento. programe1.30min/37ºc/vel 2
Adicione 200gr de farinha e os ovos e envolva 5seg/vel 6
Adicione a farinha restante e amasse 2min/ vel espiga
Retire para um tabuleiro polvilhado com farinha e deixe levedar em local morno durante 40 min.



Preparação do recheio:
Coloque no copo a casca da laranja e o açúcar e pulverize 15seg/ vel 9, adicione o chocolate e dê uns golpes de turbo. Reserve.

Após a massa estar levedada, Pré-aqueça o forno a 180ºc

Numa superfície polvilhada com farinha, estenda a massa com um rolo formando um rectângulo, pincele a massa com a manteiga derretida e distribua o reparado de chocolate e laranja.





Enrole a massa de forma a ficar com um canudo recheado e corte essa massa em fatias de 2 cm de largura 



Coloque em cima de um tabuleiro forrado com papel vegetal e pincele com as gemas de ovo leve ao forno a 180ºc.
Quando retirar do forno deixar arrefecer um pouco e polvilhar com açúcar em pó.

Eng: This weekend I decided to use one of the many cubes of fresh baker's yeast I have in the fridge and I have to use it as soon as possible because I bought more than i need at Christmas time.

This recipe is from the bimby/thermomix magazine of September 2011 and was delicious in the snack I made to accompany a capucchino. I just found that after the dough cooling looses it's fluffyness.

Ingredients for the dough:
70gr of milk
50g of sugar
1/2 teaspoon of fine salt
60gr of butter
20g fresh baker's yeast
420gr of wheat flour type 65 (if you use flour type 55 add plus 30gr = 450gr)
2 whole eggs

For the filling:
Peel of 1/2 orange, orange part only
70gr of sugar
100gr of chocolate in pieces
50 gr of melted butter
2 beaten egg yolks for brushing
Powdered sugar for sprinkling

Tools:
Bimby/thermomix
Rolling pin
Parchment paper

Preparation of the dough:
Put the milk, sugar, salt, butter and yeast in the thermomix cup. programe 1.30min / 37ºc / vel 2
Add 200gr of flour and eggs and mix 5seg / vel 6
Add the remaining flour and knead 2min / Wheat button

Remove to a tray dusted with flour and let proof in warm place for 40 min.

Preparation of the filling:


Put the orange peel and sugar in the thermomix cup and pulverize 15seg / vel 9, add the chocolate and give a turbo blows. Reserve.

On a surface dusted with flour, spread the dough with a roll forming a rectangle, brush the dough with the melted butter and distribute the chocolate and orange mix..

Roll the dough so that it fills with a stuffed straw and cut the dough into slices 2 cm wide

Place on a tray lined with parchment paper and brush with the egg yolks bake at 180ºc.


when removing from the oven let cool slightly and sprinkle with powdered sugar.

Barra de proteina / Protein bar









Agora que acabaram as festas (pelo menos em Portugal), podemos voltar à rotina normal em relação a comidas. Vi esta receita no youtube da Rachel Talbott aqui e fiquei com curiosidade e como tinha os ingredientes, resolvi experimentar, foi aprovado pelo marido e por mim!


Ficou com um peso final de 250gr, mas eu não consegui que ficasse sólida como a Rachel indica, mas ficou no frigorífico e também ficou boa, adicionei as pepitas de chocolate que na receita indica que são opcionais, no video a Rachel também não colocou.


Ingredientes:

1/2 cup de Aveia
1 Colher de sopa farinha de coco
1 pitada de sal
1 pitada de canela
1 scoop de proteina de baunilha
2 colher sopa de manteiga de amêndoa
1 colher sopa de xarope de ácer
1/4 cup de leite de coco ou outro à escolha
Papel vegetal

Opcional:

Pepitas de Chocolate

Guardar no frigorífico embrulhado em papel vegetal.

Now that the holidays are over, we can go back to the normal routine with regard to food. I saw this recipe on Rachel Talbott's youtube channel here and I was curious and as I had all of the ingredients, I decided to experiment, it was approved by the husband and me!
In the final, it had a weight of 250gr, but mine didnt turn out solid, but it stayed in the fridge and it was good too, I added the chocolate chips the recipe says optional and in the video, Rachel also did not put. but i did and i like it

ingredientes.

1/2 Cup Rolled Oats 1 Tablespoon Coconut Flour or Banana Flour pinch sea salt pinch cinnamon 1 Scoop Vanilla Protein 2 Tablespoons Nut Butter 1 Tablespoon Maple Syrup 1/4 Cup Coconut Milk (or milk of your choice)
Optional: Chocolate Chips or Dairy Free Chocolate Chips

Store in the fridge

Chocolate Bounty Caseiro / Homemade Bounty chocolate


Vamos iniciar o ano com um docinho(como se não tivéssemos comido doces suficientes nestes últimos dias....)este é para quem gosta de coco e chocolate, a receita já a conheço há muitos anos do blog Baunilha e Caramelo  e é de comer e chorar por mais.

Ingredientes:

200 gr coco ralado
100ml de natas
70gr manteiga
70gr açucar em pó
200 gr chocolate de leite - (eu coloco chocolate de culinária com 43% de cacau do continente)

Nota:
.Como o chocolate que eu uso é mais espesso, para conseguir uma boa cobertura, precisei de 400gr.
. Rendeu 28 unidades

Let's start the 2018 year with a sweet (as if we had not eaten enough sweets these last days ....) this sweet is for those who like coconut and chocolate, the recipe I've known for many years from the blog Vanilla and Caramelo and it's to eat and cry for more.


Ingredientes:
200 gr/7oz grated coconut
100ml/3,38oz of cream
70gr /2,47oz butter
70gr /2,47oz icing sugar

200 gr/7oz milk chocolate - (I use chocolate with 43% cocoa)



Note:
. As the chocolate I use is thicker, to get a good coverage, I need 400gr.
. Mine recipe gave me 28 units

PT:Numa taça, juntar o coco e o açúcar em pó, misturar bem.
Eng: In a bowl, combine coconut and powdered sugar, mix well.

PT:Em banho maria, colocar a manteiga e as natas, até a manteiga derreter.Juntar a manteiga e as natas ao coco e misturar bem.
Eng:In a water bath, put the butter in a bowl and let the cream heat until the butter melts.

Add the butter and the cream misxture to the coconut and sugar and mix well. 



PT:Moldar bolas com as mãos (cerca de 1 colher de sopa cada)(as minhas ficam mais parecidas com cilindros. É necessário pressionar, para não se desmancharem. 
Colocar sobre papel vegetal, cobrir com película aderente e levar ao frigorífico durante por 1 hora.
Eng:Shape small balls with your hands (about 1 tablespoon each). You need to press to take shape and not to fall apart. Place them on parchment paper, cover with adherent film and refrigerate for at least 1 hour.


PT:Derreter o chocolate em banho maria e mergulhar as bolas no chocolate derretido até ficarem cobertas pelo chocolate.
Eng:Melt the chocolate in a water bath and dip in the melted chocolate until covered with chocolate.





PT: Guardar no frigorifco numa caixa.
Eng: Store in the fridge in airtight container

Bolo de Cenoura e Chocolate / Carrot and Chocolate Cake

Este é o bolo que mais faço em casa, é um bolo fofo e húmido e não muito doce, é óptimo para acompanhar um chá ou café.

This is the cake I make all the time at home, it is a fluffy and moist cake and not very sweet, it is great to accompany a tea or coffee.




Cenoura e laranja ralada/ Carrot and peel organge grated)

Claras em castelo / Egg whites beated 

Claras e mistura de Cenoura juntas/ Egg whites and carrot mixture together

Bom Apetite!/ Enjoy!


Ingredientes do Bolo:
250 gr de Cenoura
Casca de 1 laranja
4 Ovos grandes
200 gr açucar
100 gr óleo
220 gr farinha
1 clh sopa de fermento
1 pitada de sal fino
Forma redonda com buraco
Manteiga e farinha para untar a forma


Cobertura de chocolate:
40 gr manteiga
40 gr de chocolate negro 70% em barra (pode colocar umas colheres de açúcar se preferir)
20 a 30 gr de leite (depende se gostar do chocolate mais líquido ou mais grosso)


-Pré-aqueça o forno a 180ºC
-Ralar a cenoura e a casa de laranja, reservar.
-Numa tigela à parte, separar os ovos e bater as gemas com açúcar até ficar com aspecto esbranquiçado, juntar a mistura de cenoura e laranja, o óleo, a farinha e o fermento.
-Noutra tigela, bater as claras em castelo com a pitada de sal fino.
-Juntar a mistura de cenoura às claras mexendo suavemente com uma vara de arames para não retirar o ar.

-Untar a forma com buraco com manteiga e polvilhar com farinha, deitar a mistura na forma e levar ao forno cerca de 40 min (varia de forno para forno) ao fim desse tempo, espetar um palito se não vier massa agarrada, está pronto!.
-Remover do forno e deixar arrefecer e desenformar.


Para a Cobertura:
-Colocar todos os ingredientes em banho maria e deixar derreter, deitar em cima do bolo.

Cake ingredients:
250 gr of carrot grated finnely
Peel of 1 orange
4 Large Eggs
200 gr sugar
100 gr oil
220 gr flour
1 tbl yeast soup
1 pinch of fine salt
Baking tin with hole
Butter and flour to spread the tin


Chocolate Sauce:
40 gr butter
40 gr of dark chocolate 70% in bar (you can add a few spoons of sugar if you prefer)
20 to 30 grams of milk (it depends if you like the chocolate more liquid or thicker)


-Preheat the oven to 180ºC/356Fº
-Grate carrot and orange peel, reserve.
-In a separate bowl, separate the eggs and beat the yolks with sugar until they appear the sugar has dissolved, add the carrot and orange mixture, the oil, flour and baking powder.
In another bowl, beat the egg whites with the pinch of fine salt. 
-Add the carrot mixture to the egg whites by gently stirring with a wire stick to keep out the air.


-Spread the cake tin with butter and sprinkle with flour, pour the mixture into the tin and put the oven for about 40 min (may varie from oven to oven) at the end of that time, stick a toothpick if there is no uncooked cake, is ready !.
-Remove from oven and let cool and unmold.


Chocolate Sauce:
-Put all the ingredients in a saucepan over water bath and let melt, pour over the cake

* To you who use the american measurements, sorry but i dont have this recipe in cups, but if you have a scale is very easy to do this recipe :)

Bolachas com pepitas de chocolate / Chocolate chip cookies



Fiz estas cookies no fim de semana, queria um docinho, mas não sabia bem o quê lembrei-me desta receita que a Constança Cabral partilhou há uns anos (2013...estou mesmo a ficar velha... aqui e nunca mais me esqueci delas) finalmente experimentei, gostei delas, apenas achei que são um pouco doces de mais. Pensava que era paranóia minha porque tenho reduzido bastante nos açúcares e podia estar a sentir mais o doce, mas como não fui a única a achar, fiquei mais descansada.

Aviso já, as bolachas ficam gigantes! usei uma colher de gelado daquelas com 5 cm de diâmetro e as bolachas ficaram com 10 cm no final!! mostro uma foto com a minha mão para verem como são grandes.

Fiz outras um pouco mais pequenas e renderam bastantes bolachas, mais que as 18 indicadas.

Podem embrulhar e oferecer a quem mais gostam!


Manter num frasco fechado hermeticamente para manterem a suavidade, se ficarem num frasco sem ser hermético, vão ficar crocantes.

I made these cookies over the weekend, I wanted a sweetie, but I was not sure what.
 I remembered this recipe that Constança Cabral shared a few years ago (2013 ... I'm really getting old ... here and I never forgot of them) I finally tried them, I liked them, I just thought they were a little too sweet.
I thought it was paranoia of mine because I have reduced sugar quite a bit and I may have been feeling more sweet os things, but since I was not the only one to find it, I was more rested.

Warning, the cookies are gigantic! I used a ice cream scopp spoon with 1.96inch in diameter and the biscuits were 3.93inch in the end !! I show a photo with my hand to see how big they are.

You can wrap and offer to those you like!

Keep in a sealed Jar to maintain the softness, if kept in a jar without being hermetic, the cookies will become crunchy.
