Quince jam
This marmalade ... I do not know if I tell you, or if I show you ..., it was made with offered quinces (we have no quince tree) and they are organic.
Warning already, the quinces are super hard to peel, it took 3 people and 40 min to peel 3 kg of quinces, but the result could not be better, 9 bowls of marmalade and 3 jars of jelly !!
Recipe:
2.5 kg quinces (already peeled and without the seeds )
1.250 gr of sugar
water (until de higth of the quinces)
Put the quinces and the sugar in a pan, cover the quinces with water, put on low heat for 2 to 2:30 hours, after that time mash with a magic wand and put in bowls.
This marmalade is great to spread, if you want to cut marmalade, let it clear longer.
Put disks of parchement paper soaked in brandy or other alcoholic beverage to preserve on top of the Jam.
